Restaurant ‚U Tří růží‘ (Three Roses) is located in the south wing of the Broumov monastery, which is a part of the national cultural monument of the Czech Republic. It was a great challenge to place the restaurant in the protected building, especially due to the demanding conditions of the Monument Care Department. Technological facilities had to be implemented in such a way as no to visually disturb the existing character of the building, but at the same time to stay functional and accessible. The vaulted spaces uniquely determine the final character and atmosphere of the restaurant. Windows, doors and floors are refurbished or replicas of the original historical elements. The space of the restaurant looks airy and modest, which is distinctive to the monastery premises.
